Founder of the Taste of Racha
Traditional ham has always produced in my family in Racha and in the past, it was mainly consumed within our household and gifted to friends and relatives living in other regions. After growing up I moved to Tbilisi, where I lived for a while, however, Racha was calling me. So, in 2012, I decided to move back to Racha and to continue the family tradition of making local ham. I knew that to get the right flavour, I needed the local, Georgian breed of pig and the natural environment. Hence, I embarked on this journey and slowly, but surely, started to rebuild my family tradition and today, I offer my customers the real taste of Racha.
Traditional ham from Racha can be consumed as a product itself, cured and sliced, as well as used in cooking. Hence, I decided to offer to my clients both versions - thinly sliced Racha ham, which can be served as an appetizer to share, as well as whole cuts, which can be used for cooking, or as a main course.
